The problem with these tool rests/jigs etc is that there simply arent rigid enough. When a machine shop grinds something (with a surface grinder for example), the machine is very rigid and massive and secondly they use a technique called sparkingout where they set the grind depth and pass the wheel over the tool until it no longer touches anywhere (thus no longer making sparks).
